Pinhead Gunpowder Green Tea - WS
One of China's best-known teas, Gunpowder, is produced in the Zhejiang Province in eastern China. This tea was originally rolled into pellets (resembling gunpowder) to help keep it fresh for as long as possible on the long journey across the oceans. Using the youngest, most tender green tea leaves, the Pinhead Gunpowder is a smaller rolled tea than our Gunpowder Imperial.
When brewed, the small, tightly balled, silvery-green leaves open into large olive green leaves. Pinhead Gunpowder Green tea has a medium body, with a very delicate hint of smokiness in the light amber cup.
Brew tea at 180º - steep for 2-3 minutes.
Gunpowder tea pairs well with recipes for fish and smoked meats, and is excellent in salad dressings, sauces and spice blends.
Green Tea Cornbread
Ingredients:
1 ¼ cups all-purpose flour
¾ cup cornmeal
¼ cup sugar
4 tsp baking powder
¾ tsp salt
1 Tbsp green tea, coarsely ground
1 cup milk
2 eggs
¼ cup butter, melted
Preparation:
Preheat the oven to 425°. Grease a 9" square baking pan.
In a medium mixing bowl, combine the flour, cornmeal, sugar, baking powder, salt and green tea. (The green tea can be ground using a clean (unscented) spice mill, food processor or mortar and pestle). Add the milk, eggs and melted butter, and beat until just blended (do not over mix). Pour in prepared pan and bake for 20-25 minutes until done.

A green tea with a slight astringency and faintly smokey aftertaste. This was good overall. I felt gunpowder imperial I ordered at the same time had a slightly stronger flavor and I preferred its slight citrus finish. But, someone who wants a smokier tea may prefer this.
