Goddess of Mercy Oolong Tea - WS
The Fujian Province of China is the birthplace for the semi-oxidized Oolong teas. Oolong teas, aka wulong or black dragon, are made from large leaves that are produced in the late Spring. Unlike other types of tea that contain the top leaves and the buds of the bush, oolong teas are large well formed leaves that will sometimes also contain the stem of the bush. Oolongs differ from green, black and white teas by the method of processing and are the most labor intensive tea to produce. Each type of Oolong varies in the percentage of oxidation and the method in which it is processed (some are twisted, tippy leaves, some are cut, some are rolled into small balls).
Goddess of Mercy (Iron Goddess, Guan Yin, Ti Kuan Yin) is a superior grade of China Oolong tea from Anxi County in the southern Fujian province. This tea brews to a light amber cup with a bold and invigorating flavor.
Brew tea at 195º - steep for 4 minutes. Try multiple infusions (let the tea steep for approximately 15 seconds longer on each subsequent infusion).
This tea pairs well with seafood, meat, poultry, mushrooms, smoked foods, chocolate, and fruit desserts.

I've been concentrating on organic S&V teas recently, and would welcome seeing Goddess of Mercy among them, because according to my prior experience it is a very nice tea. My notes say that it is a mild, inexpensive tea that "tastes expensive." And "...the large impressively-shaped leaves unfurl in a nice amber cup." Consistent with how I remember it, I'd say "5 Stars" if it were organic.
One of my favorite S&V teas. Brews to a medium body and a beautiful color. Flavor is a lovely mix of vegetal notes with a hint of darker, more oxidized flavor. No noticeable smoke (which I appreciate). Delicious sipper suitable for drinking all afternoon!
This is my go to tea. Delicious hot even in hot weather. Fresh tasting and complex.
