In the northeastern state of Assam in India, along the Brahmaputra River grow the hearty, malty Assam teas. The heavy rainfall and hot, humid day time temperatures in this area create the perfect green house like environment for growth, as well as helping to create the unique taste found only in Assam teas. Their distinct flavor can be enjoyed "as is"; however, Assam teas are often used in conjunction with other teas to create numerous blends, specifically breakfast teas.
An original Assam Company estate, Doomur Dullung means the fisherman's bridge and is referred to as the Jewel in the Crown. From this lovely garden, comes this CTC (cut, tear, curl) processed BPS (broken pekoe souchong) leaf. It brews to a deep copper cup with a smooth, malty flavor. Perfect on it's own or a great blending tea to create your own breakfast brew.
Brew tea at 212º - steep for 3 minutes.

Curious what CTC tea would be like... The first time I made this tea I took caution to not use too much and timed it to 3 minutes. The resulting brew was hyper-strong with a slightly bitter aftertaste. I have further reduced the amount and now the tea is acceptable albeit a bit flat in taste. It's not obvious to me why one would want to use this kind of processed tea when there are whole leaf alternatives at the same price. It's difficult to use alone and not as tasty as whole leaf.
