In the northeastern state of Assam in India, along the Brahmaputra River grow the hearty, malty Assam teas. The heavy rainfall and hot, humid day time temperatures in this area create the perfect green house like environment for growth, as well as helping to create the unique taste found only in Assam teas. Their distinct flavor can be enjoyed "as is"; however, Assam teas are often used in conjunction with other teas to create numerous blends, specifically breakfast teas.
These twisted, slightly tippy Assam black tea leaves from northern India are zestful and invigorating. They produce a deep copper colored cup, with a malty, mellow and full bodied flavor. Assam is truly the Bordeaux of tea!

Assam teas complement foods such as chocolate, spiced desserts, meat, strong cheeses, fish and more.
Chocolate Pots with Tea
Ingredients:
4 oz semi-sweet or bittersweet chocolate, chopped into small pieces
1 ½ cups cream
1 Tbsp Assam tea
1 Tbsp sugar
½ tsp ground cinnamon
Preparation:
Place the chopped chocolate pieces in a bowl.
On the stove, bring cream to a boil. Remove from the heat and add the tea, sugar and cinnamon. Stir, cover, and let the tea steep for 15 minutes. After 15 minutes, uncover, return to the stove and heat until bubbles start to form.
Remove from the heat and pour the cream mixture through a fine strainer onto the chocolate pieces.
Stir mixture until the chocolate is melted and the mixture is smooth.
Pour into small teacups or glasses and cover with plastic wrap. Refrigerate until set.
Serve with whipped cream and a dusting of cocoa powder.

Plesant flavor, that is somewhat more pronounced than some others. Assam Kopali, for instance. More astringent than I prefer. So I'll pass for another S&V Assam to suit my taste. I'm glad S&V offers many choices in Assams.
I find S&V Assam Kopali has plesant taste that is not loud or bold, but almost in the bacdkground. It is astringent, but not so much as some other Assams.
I'm a huge fan of this tea. Brews to a medium-full body; the texture is smooth, with minimal bitterness or astringency. The flavor/aroma are unremarkable: it tastes like a good, strong breakfast-style tea, with nice roasty, malty notes. And at this price, that's exactly what I want. I've compared it directly to a couple of the more expensive single-origin Assam teas from S&V, and usually couldn't detect much difference. Maybe that's my unsophisticated palate, but for me this tea represents a great value and a very enjoyable brew.
I made the mistake of adding sugar to this Assam tea - it's already a very smooth, sweeter tasting tea, and those hoping for an earthy or woody taste will be disappointed. Try some of the others S&V offers.
If you are looking for a good quality black tea that is strong, bold with slightly sweet aroma, this is a tea for you.
