Kathy's Iced Tea
One of our retail store customer, Kathy de MaCarty, gave us her favorite iced tea recipe.
In a saucepan put about 2 1/2 cups of water and bring to a boil. Take off the burner and add 1 heaping tablespoon of tea.
Add 1/4 to 1/3 cup of sugar (depending on your preferred sweetness).
Let stand for 10-15 minutes.
Fill a 1/2 gallon (2 quart) pitcher with ice. Put a strainer on the top and pour the tea over the ice. Fill to the top with cold water.
She said she loves the Almond Sugar Cookie iced this way as well as green teas with passion fruit nectar.

This was one of the very first teas I tried when I still wasn't 100% sold on dark black teas. It's a delight with cream or without it, and it's so delicate and gentle a flavor that you can drink it easily on an upset stomach. It's soothing to the mind and body alike. I described it to my sister as a "cry into your mug" kind of tea for when you need a comforting pick-me-up, and I stand by it. The almond flavor is not particularly strong. If anything, the almond serves to mellow out the overall flavor profile more than push almond to the forefront, so don't go in expecting a punch to the face. I don't know that I'd pair it with any biscuits when it's just so nice on its own, but simple recipes work with it best.

THIS TEA TASTES JUST LIKE AN ALMOND COOKIE AT CHINESE RESTAURANT. A NICE DESSERT TEA, OR TO DRINK ALL DAY. HAS A FULL BODY, BUT NOT OVERLY SWEET OR OVERPOWERING.ONE OF MY FAVORITES.
Great flavor/good for an everyday tea to drink all through the day. I normally don't like dessert teas, but this one is perfect----not too sweet or too strong.
I love this tea, it's so comfy and tastes just like an almond sugar cookie. I'm really picky with my flavored black teas and don't like a lot of them but this one's amazing and I would like it as a permanent staple in my stash.
