Raspberry Oat Bars with Burgundy Blast Herbal Tisane

Last night I was thinking that a little dessert might be nice.  But I had already gone to the grocery store and I had forgotten to buy eggs.  So I perused some recipes and found this one that I haven’t made in awhile and love.

Recipe in hand, I took a stroll through my quite extensive tea cupboards.  Off to the left of the 2nd shelf, jumping up and down, was the Simpson and Vail Burgundy Blast Herbal Tisane.  Being conscientious I looked at every other tea before I realized that the Blast was, for sure, the way to go.

So with my spice grinder I ground up 2 tsp of Burgundy Blast.

And the rest was easy….

1/2 cup melted butter
1/2 cup light brown sugar
1 cup flour
2 tsp ground Burgundy Blast
1/4 tsp baking soda
1/8 tsp salt
1/4 tsp cinnamon powder
1 cup oats
3/4 cup raspberry preserves

Preheat the oven to 350.  Grease an 8×8 glass baking dish.

In a medium sized bowl mix all of the ingredients together (except the jam).  Press 2/3 of the mixture into the prepared pan.  Spread the jam to within 1/4″ of the edge of the pan and sprinkle the remaining mixture on top, pressing it slightly.  Bake for 35-40 minutes until golden brown.

These bars came out better than I remembered.  The Burgundy Blast added quite a bit of taste to these bars and was definitely the best choice for this dessert.  Oh, and the bars, enjoyed so much in the evening, made an excellent breakfast treat with a cup of tea!
