Japan, with its warm climate and ample rain, is a perfect environment for tea growing. Tea growing is thought to have begun here in the 8th century. While other countries grow their tea bushes on hillsides and pick teas by hand, Japanese gardens are meticulously planted in rows along hills close to natural water sources. Although some teas are hand-picked in Japan, most of the tea grown here is mechanically picked and processed using high tech machinery. Also, unlike other countries that designate their teas by regions or estates, Japanese teas are generally sold by styles.

Developed in the 1980's, this tea is produced in a unique way that results in the leaves containing a high level of the special amino acid GABA (Gamma-Aminobutyric Acid)*. In order to better satisfy the Japanese appetite for absolute freshness, scientists experimented with various methods to preserve the immediate freshness of the fresh picked tea leaves. One method has proven to be extremely successful: fine Sencha is briefly immersed in liquid nitrogen immediately after processing. The tea thus retains a taste reminiscent of freshly harvested leaves.

The tea brews to an olive green cup with a very aromatic fragrance. The taste is unique with soft buttery notes and a full, smooth flavor.

Brew tea at 180º - steep for 2 minutes.

*GABA naturally occurs in tea plants in response to biotic and abiotic stress and it regulates plant growth. The nitrogen processing method greatly increases the levels present in the finished leaf. In humans GABA acts as a neurotransmitter in our bodies, sending messages between the nervous system and the brain. Research is still on going to determine the health benefits for humans in relation to stress levels, insomnia, high blood pressure and more.
